Kombu Mixed Rice with Edamame and Oyster Sauce Stir-Fry
This delicious Kombu Mixed Rice with Edamame and Oyster Sauce Stir-Fry combines the umami flavor of kombu with vibrant vegetables and your choice of protein. It’s a healthy and satisfying meal that’s perfect for lunch or dinner!
Ingredients
1 ½ cups rice and 1 piece dried kombu (4 inches)
1 cup shelled edamame (fresh or frozen)
2 cups mixed vegetables (broccoli, carrots, bell peppers)
1 lb protein (chicken, shrimp, or tofu)
2 tbsp oyster sauce
1 tbsp soy sauce
1 tsp mirin
1 tsp sesame oil
1 tsp minced garlic
4 green onions, chopped
1 tsp sesame seeds
2 tbsp vegetable oil
Instructions

Cook the Rice: Rinse the rice under cold water until clear. In a pot, combine rice, edamame, kombu, and 2 ¼ cups water. Bring to a boil, reduce heat, and cover. Cook for 18–20 minutes until water is absorbed. Remove kombu, chop finely, and mix back into rice if desired.

Prepare the Oyster Sauce Mixture: In a small bowl, combine oyster sauce, soy sauce, mirin, and sesame oil. Set aside.

Cook the Stir-Fry: Heat vegetable oil in a wok over medium-high heat. Sauté garlic until fragrant. Add protein and throughly cook. Toss in mixed vegetables; stir-fry for 3–4 minutes. Add the oyster sauce mixture and cook for another 2 minutes, stirring well.

Serve: Serve the stir-fry with the kombu rice. Garnish with chopped green onions and sesame seeds before serving.
