Sweet Pork Salad (Barbacoa Pork Salad)
Everyone loves a Barbacoa Pork Salad. This recipe is heavy on the ingredients, however, its very easy to make and most of the time is letting the pork roast cook in the slow cooker.
Ingredients
For the roast:
3-4 pound pork roast
2 tsp salt
1 tbsp pepper
1/2 cup brown sugar
1 tbsp chili powder
1 tbsp paprika
2 tsp onion powder
2 tsp garlic powder
2 cups water
For the Dressing:
1 packet original Ranch dressing mix
1 cup mayonnaise
1 cup buttermilk
2 tomatillos, husks removed
1 bunch cilantro, stems removed
2 garlic cloves
1 small jalapeño, seeds removed
For the Salad:
6 cups cooked rice
6 cups cooked pinto beans
10 cups salad greens
8 large flour tortilla’s
tortilla strips (optional for garnish)
Instructions

To make the roast, place the roast your slow cooker and set aside.

In a small bowl, mix the salt, pepper, brown sugar, chili powder, paprika, onion and garlic powders together until combine.

Rub the spices all over the pork roast and add the water to the slow cooker. Cook the roast for about 4-6 hours on high or until the pork roast shreds easily.

To make the dressing, combine everything for the dressing into a blender and blend together until well blended and smooth.

To make the fried tortilla strips, cut about 12 corn tortillas into thin strips and fry in hot oil until they are golden brown. Remove from the oil and drain on a plate lined with paper towels.

To assemble the salads, place the large flour tortilla on a plate followed by some shredded pork rice, beans, salad greens and fried tortilla strips. Dress the salad as desired and enjoy!
