Pepper-Crusted Tri-Tip Roast with Garlic_Sherry Sauce

Ingredients
1 beef Tri-Tip Roast (2 pounds)
Rub:
1 tbsp parsley crushed mixed peppercorns
2 garlic cloves, minced
Sauce:
1/3 cup dry sherry
2 garlic cloves, thinly sliced
4 tsp cornstarch
2 cups beef stock

Preheat your oven to 425 degree’s. In a small bowl, combine the rub ingredients together and mix well.

Press the rub ingredients all over the tri-tip roast.

Place the prepared roast into a shallow roasting pan. Do not add water or cover the roast and cook for about 40 minutes for medium rare (135 degree’s) or until the your desired doneness is reached.

Meanwhile, prepare the sauce by combining the sauce ingredients into a sauce pan, whisking everything together to combine. Bring to a boil while stirring, reduce the heat to a simmer and cook for about 3 minutes. Salt and pepper the gravy to taste.

Once cooked, remove the roast from the oven and let it rest for 10 minutes before carving.

Serve the roast with the sherry sauce and your favorite sides.
