Apple Bread Pudding
Whole grain bread, apples and cinnamon make a sweet dessert that is healthy too.
Ingredients
1 whole egg
1 egg white
1 cup skim milk
1 tbsp brown sugar blend
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp cloves or allspice
6 slices whole-grain or multigrain bread, cubed
3 medium apples, cored and cubed (1/2 inch cubes)
1/2 cup raisins, craisins or blueberries, nuts of choice (optional)

Preheat oven to 350 degrees.

Spray a 9x9 baking dish with vegetable spray.

In a large bowl whisk the eggs, skim milk, brown sugar, vanilla, cinnamon and cloves or allspice all together.

Add the cubed bread, chopped apples, dried fruit and nuts to the egg mixture. Using a fork, mix everything together until the liquid has been absorbed by the bread.

Cover loosely with foil and bake in the oven for about 30 minutes or until the pudding has set.

Remove from the oven and let the pudding cool slightly before serving. Serve warm and enjoy!
