Taste of the Middle East

Fresh and clean cooking is a great way to enjoy your food anytime of the year but especially in the summer.

Ingredients

For The Flatbread: 1 tbsp instant yeast
2 cups water
1/4 cup olive oil
2 tbsp sugar
1/2 cup whole wheat flour
2 tsp sea salt
3-4 cups all-purpose flour
For the Tabbouleh Salad: 1 cup bulgur wheat
2 cups boiling water
1/2 cup olive oil
1/3 cup freshly squeezed lemon juice
2 large tomatoes, chopped
2 bunches finely chopped parsley
1 cup finely chopped green onions or chives
1/2 cup finely chopped fresh mint
1 cucumber peeled and chopped
Salt and pepper to taste
For The Hummus: 1 1/2 cups garbanzo beans, drained (about 2 cans)
1/4 cup raw tahini sauce
3 tbsp fresh lemon juice
2 tbsp olive oil
2 cloves garlic, peeled
salt and pepper to taste

Instructions

To make the flatbread: In a large bowl combine the instant yeast, water, olive oil, sugar, whole wheat flour and salt. Mix everything together lightly spray with vegetable spray, cover and let sit for an hour.

Add the remaining flour adjusting as necessary to bring the mass into a soft dough.

Remove the dough and knead on a floured work surface for 10 minutes.

Spray a large bowl with vegetable spray and place the kneaded dough into the prepared bowl.

If needed, spray the top with vegetable spray, cover and let the dough double in size.

Preheat your oven to 450 degrees with a pizza stone or a heavy baking sheet in it.

Divide the dough into 8 equal pieces and flatten each so it’s about 1/4 inch thick. If needed, lightly dust the dough with flour if it’s slightly sticky.

Place the dough in on the preheated pizza stone of heavy baking sheet for about 5 minutes on each side. Both sides should be golden brown.

Remove from the oven, slice the flatbread as desired, serve and enjoy!

To make the tabbouleh salad: Soak bulgur wheat in boiling water for 1 hour.

Drain the bulgur wheat after it has re-hydrated well in colander and return to bowl.

Add remaining ingredients to the bowl and toss together. Chill for at least two hours.

To make the hummus: Place all ingredients into the bowl of a food processor or large base blender and blend together until smooth. Chill and serve with flatbread.
