Banana Nut Muffins

Best Ever Banana Walnut Muffins/Bread

I love good banana bread and this recipe is one of the best I’ve created. Add your favorite flavors and use this as your master recipe for perfect banana bread!

Ingredients

1 cup ripe bananas, smashed
3 large eggs, slightly beaten
1/4 cup vegetable oil
1 tsp vanilla extract
2 cups flour
1 tbsp baking powder
1 tsp baking soda
3/4 cups sugar
1/2 tsp salt
1/2 cup chopped walnuts (optional)

Instructions

Preheat your oven to 350 degrees.

Spray a 12 top muffin tin or a 2 pound loaf pan pan with vegetable spray and set aside until ready to use.

In one bowl, combine the smashed bananas, eggs, vegetable oil, and vanilla extract. Mix together until throughly combined.

In a separate bowl combine the flour, baking powder, baking soda, sugar, salt. Whisk all the dry ingredients together to throughly combine.

Add the dry ingredient mixture to the wet ingredients and using a large spoon, fold everything together until well combined.

If using nuts, fold the nuts in.

Transfer the banana bread batter to your prepared muffin tins or bread pan. Place the banana bread batter into the oven and bake for approximately 45-60 minutes for the loaf bread or about 25 minutes for the muffins or until the bread/muffins are fully cooked through. I use a simple toothpick test to determine if the bread is fully cooked. Whereas, every oven is different, adjust the cooking times as needed. If the bread is browning too fast, simple tent the loaf with some aluminum foil and finish baking.
