Bacon Potato Soup
One of my favorite soups from my childhood, potato soup with bacon is easy to make and calms the soul during troubled times. Serve the soup in an artisan bread bowl and watch your family and friends enjoy!
Ingredients
12 ounces bacon, chopped
1 1/2 pounds mini Klondike potatoes, quartered
1/2 cup flour
8 cups milk
salt and pepper to taste
Instructions

Add the chopped bacon to a large pot and cook until crispy.

Add the prepared Klondike potatoes and sauté in the bacon renderings for about 3 minutes.

Sprinkle with flour and stir to incorporate the flour into the bacon fat.

Add the milk and whisk to incorporate the roux into the milk.

Bring to a boil, reduce to a simmer and simmer for about 5 minutes. Gently stir the whole time to prevent the potato soup from scorching on the bottom of the pan.

Serve the soup in an artisan sourdough bread bowl with freshly chopped parsley and chives and a little bit of shredded sharp cheddar cheese. Enjoy!
