Ingredients
For the Stuffed Peppers:
2 large chicken breasts (boneless, skinless)
4 large bell peppers (red, yellow, or orange), halved lengthwise and seeds removed
1 cup shredded Mexican cheese blend
1 cup cooked rice (optional)
1½ cups enchilada sauce (store-bought or homemade)
1 tsp smoked paprika
1 tsp ground cumin
1 tbsp olive oil
Salt and pepper, to taste
Fresh chopped cilantro, for garnish
Fire-Roasted Tomato Salsa:
1 can (14.5 oz) fire-roasted diced tomatoes
¼ red onion, finely chopped
1 clove garlic, minced
1 tbsp fresh lime juice
