Ingredients
4 (6-ounce) salmon fillets
1 large sweet potato, peeled and cubed
1 head of broccoli, cut into florets
2 tablespoons olive oil
1 tablespoon fresh lemon juice (from Tuesday)
1 teaspoon ground turmeric
1 teaspoon grated fresh ginger
1 clove garlic, minced
½ teaspoon dried thyme
Salt and freshly ground black pepper to taste

Preheat Oven & Prep Vegetables: Preheat oven to 400°F (200°C). On a large baking sheet, toss the cubed sweet potato and broccoli florets with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer.
