Sweet Potato & Black Bean Enchilada Skillet

Spice up your Tuesday with this vibrant and flavorful Sweet Potato & Black Bean Enchilada Skillet! This mexican cuisine inspired dish brings together the sweetness of roasted sweet potatoes with the earthiness of black beans, all simmered in a zesty enchilada sauce and topped with melted cheese. Cooking everything in one skillet makes for easy cleanup and a satisfyingly hearty meal. This mexican cuisine delight is a fantastic way to enjoy bold flavors and textures without the fuss of rolling individual enchiladas.

Ingredients

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1 medium red onion, chopped
2 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can red enchilada sauce
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
Salt and freshly ground black pepper to taste
1 cup shredded Monterey Jack or cheddar cheese
1/4 cup chopped fresh cilantro, for garnish
Optional toppings: sour cream, avocado slices, salsa

Instructions

Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1/2 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.

Sauté Aromatics: While the sweet potatoes are roasting, heat the remaining 1/2 tablespoon of olive oil in a large oven-safe skillet over medium heat. Add the chopped red onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Add Beans and Sauce: Stir in the rinsed and drained black beans, enchilada sauce, chili powder, cumin, and smoked paprika to the skillet. Season with salt and pepper to taste. Bring the mixture to a simmer.

Combine and Bake: Once the sweet potatoes are roasted, add them to the skillet with the black bean mixture. Stir gently to combine.

Add Cheese: Sprinkle the shredded cheese evenly over the top of the skillet.

Melt Cheese: Transfer the skillet to the preheated oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove the skillet from the oven and garnish with fresh cilantro. Serve immediately with your favorite optional toppings. Serve directly from the skillet. Offer a side of Mexican rice or a dollop of sour cream and some avocado slices for a more complete mexican cuisine experience.
