Creamy Tomato & Basil Gnocchi Bake

Get ready for a comforting and easy meatless monday meal with this Creamy Tomato & Basil Gnocchi Bake. Pillowy soft gnocchi are tossed in a rich and flavorful tomato sauce, infused with fresh basil and creamy mozzarella cheese. This simple yet satisfying dish comes together quickly, making it perfect for a busy weeknight. The combination of sweet tomatoes, fragrant basil, and melted cheese creates a truly delightful experience for your taste buds.

Ingredients

1 pound fresh or shelf-stable gnocchi
2 tablespoons olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1/2 cup heavy cream
1/4 cup fresh basil leaves, chopped
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
1 1/2 cups shredded mozzarella cheese
Fresh basil sprigs, for garnish

Instructions

Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic!

Pour in the crushed tomatoes, heavy cream, chopped basil, dried oregano, and red pepper flakes (if using). Season with salt and pepper to taste. Bring the sauce to a simmer and cook for 5 minutes, stirring occasionally, to allow the flavors to meld.

Add the gnocchi directly to the sauce in the skillet (no need to cook them separately). Stir gently to coat all the gnocchi with the sauce.

Pour the gnocchi and sauce mixture into the prepared baking dish. Sprinkle the shredded mozzarella cheese evenly over the top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.

Let the bake cool for a few minutes before serving. Garnish with fresh basil sprigs.

Serve with a simple green salad dressed with a light vinaigrette and some crusty bread for soaking up the delicious sauce.
