Homemade Dan Dan Noodles with Bok Choy

Get ready to make some seriously delicious Dan Dan Noodles right in your own kitchen! This awesome dish has chewy noodles covered in a savory pork sauce that has just a little kick of spice. We’re going to make everything from scratch, so you can taste how fresh and yummy homemade noodles can be.

Ingredients

For the Egg Noodles: Approximately 1 3/4 cups all purpose flour
Scant 1/4 teaspoon Baking Soda
Scant 1/4 teaspoon Salt
Approximately 5 1/2 - 6 tablespoons Water, lukewarm
1 tablespoon Oil (vegetable or neutral)
1 large Egg
For the Dan Dan Meat: Approximately 9 ounces Ground Pork
1 teaspoon Five Spice powder
1/2 teaspoon White Pepper
1 teaspoon Sichuan Peppercorns, lightly toasted and ground
1/2 teaspoon sugar
1 tablespoon Lite Soy Sauce
1 teaspoon Dark Soy Sauce
1 tablespoon Shaoxing Rice Wine
For the Sauce: 2 tablespoons Sichuan Chili Oil (with sediment)
2 tablespoons Tahini or Sesame Paste
1 tablespoon Chinkiang Vinegar (or black rice vinegar)
1 teaspoon Sugar (or to taste)
1 teaspoon Lite Soy Sauce (or to taste)
1-2 tablespoons Hot Noodle Cooking Water (reserved)
For the Garnish and Serving: 2 heads of Bok Choy, halved or quartered depending on size
2 Green Onions, thinly sliced
1/4 cup Roasted Peanuts, roughly chopped
2 tablespoons Fried Shallots

Instructions

Mix flour, baking soda, and salt in a bowl.

Mix egg, oil, and most of the water.

Pour the wet ingredients into the dry ingredients and mix until it's a shaggy ball of dough.

Knead the dough for about 10 minutes until it's smooth.

Cover the dough and let it rest for 30 minutes.

Cut the dough into four pieces.

Roll each piece into a thin sheet.

Fold the noodle sheet like a letter and cut it into thin noodles. Toss with flour to prevent sticking together.

Cook ground pork in a pan until brown. Drain any fat.

Add spices and sauces (vinegars, soy sauce) to the pork and cook for a few minutes.

Boil some water and cook the bok choy for 2-3 minutes. Take it out.

Cook the noodles in the same boiling water for 2-3 minutes. Save some of the hot water, then drain the noodles.

Mix chili oil, tahini, vinegar, sugar, and soy sauce in a bowl. Add a little hot noodle water to make it saucy.

Put noodles in bowls, pour sauce on top, and add the pork.

Put the bok choy on the side and sprinkle with green onions, peanuts, and fried shallots.

Mix it all up and enjoy!
