BBQ Beef Sliders with Crispy Onions and Pickles

Ingredients

2 pounds boneless short ribs, cut into large dice
1 tablespoon steak seasoning (see blend below)
1 tablespoon canola oil
½ large onion, finely diced
1 clove garlic, chopped
2 cups barbecue sauce (see recipe below)
4–6 cups low-sodium beef stock or broth
12 slider buns, toasted
1 cup crispy fried onions
Bread and butter pickles, as desired
For the BBQ Sauce: 2 cups ketchup or chili sauce
4 tablespoons brown sugar
4 tablespoons apple cider vinegar
1 tablespoon steak seasoning (see blend below)
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon Worcestershire sauce (optional)
For the Steak Seasoning Blend: 1 tablespoon kosher salt 

2 teaspoons ground black pepper 

1 teaspoon garlic powder
1 teaspoon onion powder 

1 teaspoon crushed coriander seed 


Instructions

Prepare the Steak Seasoning Blend: In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, and crushed coriander seed.

Make the BBQ Sauce: In a mixing bowl, whisk together ketchup, brown sugar, apple cider vinegar, steak seasoning, onion powder, garlic powder, and Worcestershire sauce (if using) until well combined. Set aside.

Cook the Short Ribs: Heat canola oil in a large saucepot over medium heat. Season the diced short ribs with the steak seasoning blend. Add the beef to the pot and sear on all sides until caramelized. Remove the beef and set aside.

Sauté Aromatics: In the same pot, add the diced onion and a pinch of salt. Cook for 3–5 minutes until tender. Add the chopped garlic and sauté for an additional minute.

Braise the Beef: Return the seared beef to the pot. Pour in the prepared BBQ sauce and 4 cups of beef stock. Bring to a simmer, then reduce the heat to low. Partially cover the pot and let the beef simmer for 3–4 hours, or until tender and the sauce has reduced. Add more stock as needed during braising.

Shred the Beef: Once tender, remove the beef from the pot and let it cool slightly. Shred the meat using two forks, then return it to the sauce, mixing well. Adjust seasoning if necessary.

Assemble the Sliders: Place a portion of the braised beef onto each toasted slider bun. Top with crispy fried onions and bread and butter pickles as desired. Serve immediately.
