
Golden Turmeric Chicken & White Bean Soup
A warm, nourishing bowl of turmeric chicken and white bean soup packed with anti-inflammatory ingredients like ginger, garlic, cabbage, and carrots. This protein-rich, hearty meal is perfect for a cozy dinner.

Ingredients
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1-inch piece ginger, grated
1 tsp ground turmeric
½ tsp ground cumin
½ tsp smoked paprika
1 cup carrots, diced
1 ½ cups shredded green cabbage
1 lb boneless, skinless chicken breast, cubed
1 (15 oz) can white beans, drained and rinsed
1 cup red lentils, rinsed
4 cups vegetable broth
1 (15 oz) can diced tomatoes
Juice of ½ lemon
2 cups kale, chopped
salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add diced onion, garlic, and grated ginger, cooking until fragrant, about 2 minutes.

Stir in the cubed chicken and cook until lightly browned, about 3 minutes. Add turmeric, cumin, and smoked paprika, stirring to coat the chicken. Then, mix in the carrots and shredded cabbage.

Pour in the chicken broth, diced tomatoes, red lentils, and white beans (drained and rinsed). Bring to a boil, then reduce heat and let simmer for 25 minutes, stirring occasionally, until the lentils are soft and the chicken is fully cooked.

Stir in the kale, salt, black pepper, and lemon juice. Simmer for 5 more minutes. Taste and adjust seasoning if needed. Serve warm and enjoy!
