Lemon Herb Chicken Souvlaki

Lemon Herb Chicken Souvlaki

A classic Greek dish featuring juicy, marinated chicken skewers grilled to perfection and served with a refreshing cucumber-dill tzatziki and warm pita bread.

Ingredients

For the chicken souvlaki: 1 ½ lbs chicken breast, cut into 1-inch cubes
3 tbsp olive oil
Juice of 1 lemon
2 cloves garlic, minced
1 tsp dried oregano
½ tsp ground cumin
½ tsp paprika
½ tsp salt
¼ tsp black pepper
8 wooden skewers (soaked in water for 20 minutes)
For the tzatziki: 1 cup Greek yogurt
½ cucumber, grated and squeezed dry
1 clove garlic, minced
1 tbsp fresh dill, chopped
Juice of ½ lemon
½ tsp salt
For serving: 4 pita breads, warmed
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
½ cup fresh parsley, chopped

Instructions

Marinate the chicken: 
In a bowl, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add chicken pieces, toss to coat, and marinate for at least 30 minutes.

Prepare the tzatziki: 
In a bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, and salt. Refrigerate until ready to serve.

Assemble and grill the skewers: 
Thread marinated chicken onto skewers. Grill over medium-high heat for 10-12 minutes, turning occasionally, until fully cooked.

Assemble the dish
: Serve grilled chicken in warm pita with tzatziki, cherry tomatoes, red onion, and parsley.
