Chipotle Lime Shrimp Tacos

These Chipotle Lime Shrimp Tacos bring the heat with smoky, marinated shrimp, balanced by a creamy avocado crema and crunchy slaw in warm corn tortillas.

Ingredients

For the shrimp: 1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp chipotle in adobo, minced
Juice of 1 lime
1 tsp ground cumin
½ tsp smoked paprika
½ tsp garlic powder
Salt & pepper to taste
For the slaw: 2 cups shredded cabbage
¼ cup red onion, thinly sliced
1 tbsp apple cider vinegar
½ tsp honey
Salt & pepper to taste
For the avocado crema: 1 ripe avocado
¼ cup Greek yogurt
Juice of ½ lime
1 tbsp cilantro, chopped
½ tsp garlic powder
Salt to taste
For serving: 8 small corn tortillas
Fresh cilantro, chopped
Lime wedges

Instructions

Marinate the shrimp: 
In a bowl, mix shrimp with olive oil, chipotle, lime juice, cumin, smoked paprika, garlic powder, salt, and pepper. Let marinate for 15 minutes.

Prepare the slaw: 
In a separate bowl, toss cabbage, red onion, vinegar, honey, salt, and pepper. Set aside.

Make the avocado crema: 
Blend avocado, Greek yogurt, lime juice, cilantro, garlic powder, and salt until smooth.

Cook the shrimp: 
Heat a pan over medium-high heat. Cook shrimp for 2-3 minutes per side until opaque.

Assemble the tacos
: Warm tortillas, add shrimp, top with slaw, drizzle with avocado crema, and sprinkle with fresh cilantro. Serve with lime wedges.
