Spiced Sweet Potato Kale Stir-Fry

Spiced Sweet Potato & Kale Stir-Fry

A nutrient-packed stir-fry featuring roasted sweet potatoes, kale, and warm spices. Quick, satisfying, and perfect for an anti-inflammatory diet.

Ingredients

2 large sweet potatoes, peeled and diced

1 bunch kale, chopped

1 small red onion, sliced

2 cloves garlic, minced

1 tsp turmeric

1/2 tsp cumin

1/2 tsp smoked paprika

2 tbsp olive oil

Salt and pepper to taste

1/4 cup toasted pumpkin seeds (optional)


Instructions

Roast the sweet potatoes - Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, turmeric, cumin, smoked paprika, salt, and pepper. Roast for 25 minutes.

Sauté the aromatics - In a large pan, heat olive oil over medium heat. Add red onion and garlic; sauté until fragrant.

Add kale and combine - Stir in kale and cook until wilted. Add roasted sweet potatoes and mix well.

Finish and serve - Top with toasted pumpkin seeds and serve warm.
