Miso Pork & Kimchi Dashi Soup
This comforting miso pork and kimchi dashi soup is packed with umami, warmth, and depth of flavor. Tender pork, savory dashi broth, tangy kimchi, and rich miso come together in a quick, nourishing bowl that’s perfect for a cozy meal.
Ingredients
1 lb pork (thinly sliced)
4 cups dashi broth
1 cup kimchi, chopped
2 tbsp miso paste (white or red, depending on preference)
1 tbsp soy sauce
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp ginger, grated
1/2 block firm tofu, cubed (optional)
2 green onions, sliced
1 tsp toasted sesame seeds (for garnish)
1/2 tsp gochugaru (Korean red pepper flakes, optional for spice)

Prepare the Dashi: If using homemade dashi, simmer kombu and bonito flakes in water, then strain. If using instant dashi, dissolve the powder in warm water.

Cook the Pork: Heat sesame oil in a pot over medium heat. Add pork and cook until browned. I choose to use ham on tv and simply sautéed it in the oil until warmed through. Stir in garlic and ginger, cooking for another minute.

Add Kimchi: Stir in the chopped kimchi and cook for 2-3 minutes to release its flavors.

Simmer the Soup: Pour in the dashi broth and bring to a gentle simmer. Add soy sauce and let it cook for 5-7 minutes.

Incorporate Miso: In a small bowl, mix the miso paste with a bit of hot broth until smooth. Stir it into the soup, making sure it doesn't boil to preserve flavor.

Add Tofu & Finish: If using, gently add tofu cubes and let them warm through. Sprinkle gochugaru for spice if desired.

Garnish & Serve: Ladle the soup into bowls, topping with sliced green onions and sesame seeds. Serve hot.
