Pumpkin Coach Bisque

This Pumpkin Coach Bisque is a creamy, comforting soup perfect for fall! Made with canned pumpkin, warm spices, and a touch of cream, it’s rich, flavorful, and incredibly easy to make. Whether you’re looking for a quick weeknight meal or a fancy starter for a holiday dinner, this bisque is sure to impress. The best part? It comes together in just 30 minutes! Pair it with crusty bread or a grilled cheese sandwich for the ultimate cozy meal.

Ingredients

2 tbsp butter

1 small onion, 2 small peeled carrots, 2 celery stalks
2 cloves garlic
1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp smoked paprika

1 (15-oz) can pumpkin puree

3 cups vegetable broth

1/2 cup heavy cream
 or heavy coconut milk
Salt and pepper to taste

Pumpkin seeds and fresh thyme for garnish (optional)


Instructions

Chop up the peeled carrot, celery, onion and garlic in the bowl of your food processor or by hand.

In a large pot over medium heat, melt the butter. Stir in the chopped onion mixture, cinnamon, nutmeg, and smoked paprika, cooking for another minute until fragrant.

Pour in the canned pumpkin and vegetable broth, stirring well to combine. Bring the mixture to a gentle simmer and let it cook for 10 minutes, allowing the flavors to meld together.

Use an immersion blender to puree the soup until silky smooth. If using a traditional blender, carefully transfer the soup in batches, then return it to the pot.

Stir in the heavy cream or heavy coconut milk, then season with salt and pepper to taste. Let the bisque simmer for an additional 5 minutes.

Ladle the bisque into bowls and top with pumpkin seeds and fresh thyme for extra flavor. Serve warm with your favorite bread or grilled cheese sandwich. Enjoy!
