Ingredients
2 tbsp butter
1 small onion, 2 small peeled carrots, 2 celery stalks
2 cloves garlic
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp smoked paprika
1 (15-oz) can pumpkin puree
3 cups vegetable broth
1/2 cup heavy cream
or heavy coconut milk
Salt and pepper to taste
Pumpkin seeds and fresh thyme for garnish (optional)
Instructions

Chop up the peeled carrot, celery, onion and garlic in the bowl of your food processor or by hand.

In a large pot over medium heat, melt the butter. Stir in the chopped onion mixture, cinnamon, nutmeg, and smoked paprika, cooking for another minute until fragrant.

Pour in the canned pumpkin and vegetable broth, stirring well to combine. Bring the mixture to a gentle simmer and let it cook for 10 minutes, allowing the flavors to meld together.

Use an immersion blender to puree the soup until silky smooth. If using a traditional blender, carefully transfer the soup in batches, then return it to the pot.
