Ingredients
6 bone-in, skin-on chicken thighs
1/3 cup soy sauce (low sodium recommended)
1/4 cup honey
2 tablespoons brown sugar
1 tablespoon rice vinegar
1 tablespoon sesame oil
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/2 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch
1 tablespoon water
1 tablespoon sesame seeds (for garnish)
2 green onions, thinly sliced (for garnish)
Instructions
1
Prepare the Marinade: In a small bowl, whisk together the soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes (if using). Reserve half of the marinade for later.
2
Marinate the Chicken: Place the chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 4 hours for deeper flavor.
3
Cook the Chicken: Preheat your oven to 400°F (200°C). Heat a large oven-safe skillet over medium heat. Remove the chicken from the marinade (discarding the used marinade) and place it skin-side down in the skillet. Sear for 4-5 minutes until the skin is golden and crispy. Flip the chicken and cook for another 2 minutes.
4
Bake to Perfection: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
5
Make the Glaze: While the chicken bakes, prepare the glaze. In a small saucepan, combine the reserved marinade, cornstarch, and water. Cook over medium heat, whisking constantly, until the mixture thickens into a glossy glaze (about 2-3 minutes).
6
Glaze and Serve: Remove the chicken from the oven and brush the glaze generously over each piece. Sprinkle with sesame seeds and green onions. Serve hot with steamed rice and vegetables, and enjoy!
