Spatchcock Roasted Turkey

Learn how to make a juicy, perfectly seasoned spatchcock turkey with this easy recipe. Flattened for even cooking, it’s a showstopper for any holiday meal! This method ensures crispy skin, tender meat, and a shorter roasting time for stress-free preparation.

Ingredients

1 whole 12 lb turkey, thawed
1 cup mayonnaise
1 tsp dried sage
1 tsp dried thyme
1 tsp paprika
1 tsp celery salt
1 tsp celery seeds
1 tsp dried parsley
1 tbsp chicken bullion
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp black pepper

Instructions

Preheat the Oven: Set your oven to 350°F (175°C).

Prepare the Turkey: Remove the gizzard package from the turkey cavity. Set aside for later use or discard.

Spatchcock the Turkey: Place the turkey breast-side down on a clean work surface. Use kitchen shears to carefully cut along both sides of the backbone and remove it. Flip the turkey over, breast-side up, and press firmly on the breastbone to flatten it.

Dry and Position: Place the flattened turkey on a wire rack inside a baking sheet. Pat the skin dry with paper towels.

Make the Herb Mixture: In a small bowl, mix the mayonnaise, sage, thyme, paprika, celery salt, celery seeds, parsley, bouillon powder, onion powder, garlic powder, and black pepper until fully combined.

Coat the Turkey: Spread the herb mixture evenly over the entire turkey, ensuring full coverage for maximum flavor.

Roast the Turkey: Roast in the preheated oven for approximately 1 hour, or until the internal temperature of the turkey reaches 165°F (74°C) in multiple spots.
