Chicken Shawarma Bowls

These Chicken Shawarma Bowls are a delicious way to bring the flavors of the Middle East to your table. With juicy, spice-marinated chicken, fresh vegetables, and a tangy garlic yogurt sauce, this bowl is packed with texture and vibrant colors. Perfect for a quick and healthy meal, these bowls are easy to customize and make an ideal choice for weeknight dinners or meal prep.

Ingredients

2 lbs chicken thighs or breasts, cut into bite-sized pieces
6 tbsp olive oil
4 tbsp lemon juice
2 tsp ground cumin
2 tsp ground coriander
2 tsp ground paprika
1 tsp ground turmeric
1 tsp ground cinnamon
1 tsp ground black pepper
1 tsp salt
1/2 tsp cayenne pepper (optional, for heat)
4 cloves garlic, minced
For the Bowls: 2 cups cooked quinoa or rice
2 cups chopped cucumber
2 cups diced tomatoes
1 cup shredded lettuce or baby spinach
1/2 cup red onion, thinly sliced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup crumbled feta cheese (optional)
For the Garlic Yogurt Sauce: 1 cup Greek yogurt
2 tbsp lemon juice
2 cloves garlic, minced
Salt and pepper to taste

Instructions

Marinate the Chicken: In a mixing bowl, whisk together olive oil, lemon juice, cumin, coriander, paprika, turmeric, cinnamon, black pepper, salt, cayenne pepper (if using), and minced garlic.

Add chicken pieces to the bowl, toss to coat well, cover, and marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

Cook the Chicken: Heat a large skillet over medium-high heat. Add a drizzle of olive oil. Add the marinated chicken and cook for 5-7 minutes on each side or until golden brown and cooked through. Remove from heat and let rest for a few minutes.

Make the Garlic Yogurt Sauce: In a small bowl, whisk together Greek yogurt, lemon juice, minced garlic, salt, and pepper. Adjust seasoning to taste.

Assemble the Bowls: Divide quinoa or rice among 4 bowls as the base.

Arrange cooked chicken, cucumber, tomatoes, lettuce or spinach, red onions, olives, and feta cheese (if using) on top. Drizzle with garlic yogurt sauce and garnish with a sprinkle of fresh parsley or cilantro if desired.
