Crispy Pork Belly Sliders

These Crispy Pork Belly Sliders are a mouthwatering combination of tender, juicy pork belly with perfectly crisped skin, served on soft brioche buns. Topped with tangy pickled onions and spicy sriracha mayo, these sliders pack a punch of flavor in every bite. Whether you’re hosting a party or just craving something indulgent, these sliders are guaranteed to impress.

Ingredients

1 lb pork belly, skin-on
1 tbsp kosher salt
1 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
6 mini brioche buns
¼ cup pickled onions
¼ cup sriracha mayo (mix ¼ cup mayonnaise and 1 tbsp sriracha)
1 tbsp olive oil
Fresh cilantro (optional)

Instructions

Set the oven to 300°F (150°C).

Score the pork belly skin in a crisscross pattern and pat it dry with paper towels to remove excess moisture.

Rub the pork belly with salt, pepper, garlic powder, and smoked paprika, making sure to get the seasoning into the scored skin.

Place the pork belly on a roasting rack over a baking sheet. Roast in the oven for 1.5 hours until tender.

Increase the oven temperature to 425°F (220°C) and roast for an additional 20-30 minutes, or until the skin is crispy. Watch carefully to avoid burning.

Remove from the oven and let the pork belly rest for 10 minutes before slicing.

Spread sriracha mayo on both sides of each toasted bun. Add a slice of crispy pork belly, then top with pickled onions and cilantro.
