A delicious Japchae recipe with sweet potato noodles, stir-fried vegetables, and thinly sliced beef for a hearty, flavorful dish.

Korean Japchae Noodles

Japchae is a classic Korean noodle dish featuring sweet potato noodles stir-fried with vegetables and beef, all tossed in a savory-sweet soy sauce. This dish is perfect for a flavorful, well-balanced meal that’s both satisfying and easy to prepare.

Ingredients

For the Noodles: 1/2 lb sweet potato noodles (DangMyeon)
6 cups water
2 tbsp soy sauce
1 tbsp brown sugar
1 garlic clove, whole
1/8 tsp black pepper
1 tbsp oil
1/2 tbsp sesame oil
Vegetables: 1/2 white onion, sliced
2 green onions, chopped
1/2 carrot, julienned
salt and pepper to taste
1 tbsp oil
Optional: Spinach or kale
3 shiitake mushrooms, sliced
1/4 red bell pepper, sliced
1/4 lb beef, pork, or chicken thinly sliced

Instructions

Cook the Noodles: Boil the sweet potato noodles in 6 cups of water with soy sauce, brown sugar, garlic, and black pepper. Cook until tender.

Vegetables: In a large pan, heat oil and stir-fry onions, carrots, scallions, and optional vegetables until soft.

3. Choice of protein: In the same pan, cook the beef, pork or chicken until browned, seasoning with soy sauce, garlic, and a touch of sugar.

Combine: Toss cooked noodles in sesame oil, add to the pan with vegetables and beef, and stir-fry together until fully mixed. If you don't have a large pan, I find it easier to toss everything together in a large bowl.

Garnish: Top with optional cooked egg yolk or bell peppers for extra color.
