Pumpkin Pancakes

These fluffy pumpkin pancakes are the perfect way to start your day with fall flavors. Packed with warm spices and rich pumpkin puree, they make a cozy, seasonal breakfast that’s easy to whip up.

Ingredients

1 cup self-rising flour or all-purpose flour
1 tablespoon sugar
1 tsp baking powder if using regular all-purpose flour
1/2 teaspoon baking soda if using all purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
3/4 cup milk
1/2 cup pumpkin puree
1 egg
2 tablespoons melted butter
1 teaspoon vanilla extract

Instructions

In a large bowl, whisk together the flour, sugar, baking powder (if using regular all-purpose flour), baking soda (if using regular all-purpose flour), cinnamon, nutmeg, ginger, cloves, and salt.

In another bowl, whisk together the milk, pumpkin puree, egg, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix.

Heat a lightly greased skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook the other side until golden brown, about 2 more minutes.

Serve warm with butter and maple syrup.
