Blackened Salmon Tacos with Pickled Jalapeño Coleslaw

These blackened salmon tacos combine the smoky heat of seasoned fish with the cool crunch of a tangy pickled jalapeño coleslaw. They’re a fresh, delicious twist on taco night and perfect for any occasion! Here’s a my homemade blackened seasoning blend.

Ingredients

For the Blackened Salmon: 4 salmon fillets (about 4 oz each)
- 2 tbsp vegetable oil
2 tbsp blackened seasoning (store-bought or homemade)
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
For the Pickled Jalapeño Coleslaw: 2 cups shredded cabbage (green or purple)
1 carrot, shredded
1/4 cup pickled jalapeños, sliced
2 tbsp pickled jalapeño brine (from the jar)
1 tbsp apple cider vinegar
1 tbsp honey or agave syrup
1/4 cup mayonnaise
Salt and pepper to taste
8 corn tortillas
Fresh cilantro, chopped (optional)
Lime wedges (for serving)

Instructions

Prepare the Blackened Salmon: Rub the salmon fillets with vegetable oil. In a small bowl, combine blackened seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper. Generously coat the salmon with the seasoning mix. Heat a skillet over medium-high heat. Cook the salmon fillets for 3-4 minutes per side, or until the outside is crisp and the fish flakes easily with a fork.

Make the Pickled Jalapeño Coleslaw: In a large bowl, combine the shredded cabbage, carrot, and pickled jalapeños. In a separate small bowl, whisk together the pickled jalapeño brine, apple cider vinegar, honey, and mayonnaise. Season with salt and pepper to taste. Pour the dressing over the cabbage mixture and toss until fully combined.

Assemble the Tacos: Warm the corn tortillas in a dry skillet or microwave. Flake the blackened salmon into bite-sized pieces. Place a portion of salmon on each tortilla and top with a generous amount of pickled jalapeño coleslaw. Garnish with chopped cilantro if desired, and serve with lime wedges for extra zing.
