One Pot French Onion Pasta Recipe

This One Pot French Onion Pasta is a perfect blend of caramelized onions, melty cheese, and tender noodles, offering a hassle-free dinner option that packs a punch of flavor.

Ingredients

3 large onions, thinly sliced
3 tablespoons butter
2 cloves garlic, minced
1 teaspoon sugar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried thyme
1/2 cup white wine (optional)
4 cups beef broth
2 cups water
12 oz. pasta (penne or fettuccine work well)
1 cup shredded Gruyère cheese
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)

Instructions

In a large pot or Dutch oven, melt the butter over medium heat. Add the sliced onions, garlic, sugar, salt, and pepper. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.

Pour in the white wine (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes until the wine reduces by half.

Add the beef broth, water, and dried thyme to the pot. Stir to combine, then add the pasta. Bring the mixture to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed, about 10-12 minutes.

Stir in the Gruyère and Parmesan cheese until melted and well combined. Adjust seasoning with salt and pepper if needed.
