Ultimate Carne Asada with Roasted Tomato Salsa Recipe: A Flavorful Fusion

Ingredients

Marinade: 1 cup soy sauce
1 cup olive oil
1/4 onion, finely chopped
Juice of 2 limes
1/2 bunch cilantro, chopped
1 pinch black pepper
2 lbs skirt steak (or top sirloin, chuck roll)
Roasted Tomato Salsa: 10 ripe tomatoes, roasted
1 white onion, roasted
1 clove garlic
1 bunch cilantro
1 Serrano pepper, roasted
2 jalapeños, roasted
Salt, to taste
Pepper, to taste

Instructions

Prepare the Marinade: In a large bowl, combine the soy sauce, olive oil, finely chopped onion, lime juice, chopped cilantro, and black pepper. Mix well.

Marinate the Meat: Place the skirt steak in the bowl with the marinade, making sure the meat is well-coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.

Roast the Vegetables for Salsa: Preheat your oven to 400°F (200°C). Place the tomatoes, onion, Serrano pepper, and jalapeños on a baking sheet. Roast for about 15-20 minutes, or until they start to char and soften. Allow the roasted vegetables to cool slightly.

Blend the Salsa: Transfer the roasted vegetables to a blender along with the garlic clove, cilantro, salt, and pepper. Pulse the blender until the mixture reaches your desired salsa consistency—smooth or chunky, it’s up to you! Taste and adjust seasoning if needed.

Grill the Steak: Preheat your grill to medium-high heat. Remove the steak from the marinade and let any excess marinade drip off. Grill the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness.

Serve: Let the steak rest for a few minutes before slicing it against the grain. Serve the carne asada with the roasted tomato salsa and your favorite sides like Pico de Gallo, Guacamole, Mexican grilled cambray onion, Grilled cactus, patatas bravas, Rice, Black Beans, and Tortillas. Enjoy!
