Ingredients
Chimichangas:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin

1 can (4 oz) diced green chilies
1/2 cup red salsa (recipe below)
1 cup shredded cheddar cheese
6 large flour tortillas
Vegetable oil for frying

Red Salsa: 4 large ripe tomatoes, chopped
1/2 white onion, chopped
2 cloves garlic, minced
1 jalapeño pepper, chopped (seeds removed for less heat)
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt and pepper to taste

Prepare the Salsa:
• In a blender or food processor, combine the chopped tomatoes, onion, garlic, jalapeño, and cilantro.
• Blend until smooth but slightly chunky.
• Transfer to a bowl, stir in the lime juice, and season with salt and pepper.
• Refrigerate for at least 30 minutes to let the flavors meld together.

Cook the Beef:
• In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease.
• Add the diced onion and garlic, cooking until softened.
• Stir in the cumin, chili powder, paprika, salt, and pepper.
• Add the diced green chilies and 1/2 cup of the prepared red salsa. Cook for another 5 minutes.

Assemble the Chimichangas:
• Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
• Place a spoonful of the beef mixture onto each flour tortilla, sprinkle with shredded cheese, and fold the sides over the filling. Roll up the tortilla to form a chimichanga.
