Ingredients

3 large red bell peppers
6 medium-sized tomatoes
2 heads of garlic
1 large onion
4 cups vegetable broth
1 tsp smoked paprika
1 tsp dried basil
Salt and pepper, to taste
Olive oil
Fresh basil, for garnish

Instructions

Preheat your oven to 400°F (200°C).

Halve the bell peppers and remove seeds and membranes. Place them on a baking sheet, skin side up.

Halve the tomatoes and place them on the baking sheet, cut side up.

Cut the top off the garlic heads to expose the cloves. Drizzle with olive oil and wrap in foil. Place on the baking sheet.

Cut the onion into large chunks and place on the baking sheet.

Drizzle the peppers, tomatoes, and onion with olive oil and season with salt and pepper.

Roast for 30-40 minutes, until peppers are charred, tomatoes are soft, and garlic is tender.

Let the vegetables cool slightly. Peel the skin off the peppers and squeeze the roasted garlic cloves out of their skins.

In a large pot, combine roasted peppers, tomatoes, garlic, and onion. Add vegetable broth, smoked paprika, and dried basil.

Bring to a simmer and cook for 15-20 minutes.

Use an immersion blender to blend until smooth. Alternatively, blend in batches in a blender.

Season with salt and pepper to taste.
