Chicken and Green Bean Salad
Easy to make salads are a great option any time of the day. I especially like salads after a hards day work and I don’t feel like cooking.
Ingredients
For the Dressing:
1 tbsp dijon mustard
2 tbsp extra virgin olive oil
2 tbsp lemon juice
1/4 tsp dried thyme
1/4 tsp ground pepper
For the Chicken Salad:
2 cups shredded chicken (use a cooked rotisserie chicken)
1 lb frozen whole green beans, thawed and steamed if necessary
3 stalk of celery, chopped
3 tbsp almonds, chopped, unsalted
Instructions

To make the dressing: Add the mustard, olive oil, lemon juice, thyme and pepper to a small bowl and whisk together to combine.

To assemble the salad: Add the chicken salad ingredients to a large bowl and drizzle the dressing over the ingredients. Toss to coat. Serve and enjoy!
