Ingredients

For the Dough: 4 cups all-purpose flour
2 cups water (adjust as needed)
1/3 cup sugar
1 1/2 tsp yeast
1/4 cup olive oil
2 tsp salt
For the Toppings: 3 cups prepared mole
4 cups prepared pico de gallo (plus extra for topping)
12 corn tortillas (shredded/torn)
6-8 cups assorted shredded cheese
2 pounds hamburger (cooked and seasoned)
1 cup sliced olives
1 cup whole kernel corn
8 cups shredded lettuce
Mayonnaise (for drizzling)
Hot Sauce (for drizzling)

Instructions

1
Making the Dough: In a mixer, combine the dough ingredients and knead for 10 minutes until smooth. Adjust water and flour as needed.
2
Spray the dough with vegetable spray and let it double in size.
3
Preheat and Prepare: Preheat your oven to 450 degrees with a pizza stone inside.
4
Divide and Roll: Divide the dough into two equal rounds. Roll each round into a 14-inch pizza and evenly distribute the toppings between the two pizzas, excluding the shredded lettuce.
5
Prepare the Taco Toppings: Cook the hamburger using taco seasoning for that authentic taco flavor.
6
Assemble the Taco Pizzas: Start with a layer of prepared mole, shredded/torn corn tortillas, cheese, seasoned taco hamburger, pico de gallo, olives, and corn.
7
Bake to Perfection: Place the assembled taco pizzas in your preheated oven and bake for approximately 12 minutes, or until the dough is golden and the cheese is bubbling.
8
Final Touches: Remove the taco pizzas from the oven and top with freshly shredded lettuce.
9
Drizzle with mayonnaise and hot sauce for that extra kick of flavor.
