Turkish Inspired Stuffed Eggplant Recipe

Ingredients

4-6 eggplants
2 onions, thinly sliced
2 cups sweet peppers, sliced
6 garlic cloves, finely chopped
8-10 roma tomatoes, diced
1 cup pitted and chopped kalamata olives
1 tbsp smoked paprika
1 tsp cumin
Salt and pepper to taste

Instructions

Begin by preparing the eggplants. Peel stripes into them, then rub with salt and soak in cold water for about 15 minutes. After soaking, drain, rinse, pat dry, and coat with olive oil. Season with salt and pepper.

Make a lengthwise slice into each eggplant, ensuring not to cut all the way through.

Place the sliced eggplants, cut side up, in a 350-degree oven and bake for approximately 1 hour until they are tender.

While the eggplants are baking, sauté the sliced onions, sweet peppers, chopped garlic, and diced tomatoes in a large frying pan until they cook down and become fragrant.

Add the kalamata olives, smoked paprika, cumin, and season with salt and pepper. Mix everything together thoroughly.

Once the baked eggplants have cooled for about 15 minutes, carefully open the previously made slice in each eggplant.

Stuff the cooked onion mixture into the eggplants and return them to the oven for an additional 10 minutes.

In a separate bowl, combine 1/4 cup of tomato paste, 1/3 cup of water, salt, and pepper. Drizzle this tomato sauce over the stuffed eggplants.
