Ingredients
1 bunch green onions, chopped
2 carrots, peeled and thinly sliced
2 cups bean sprouts
3-4 garlic cloves, minced
1 inch fresh ginger, peeled and thinly sliced
1 small red chili, minced
1 pkg chow mein noodles, about 4 cups
1/2 teaspoon kombu salt
Sesame oil, for drizzling
2 chicken breast cut into bite size pieces
1/2 pound shrimp, peeled and deveined
Kombu salt and pepper to taste
For The sauce:
1 tablespoon soy sauce
1 tablespoon oyster sauce
2 teaspoons sesame oil
2 tsp sugar
1/2 tbsp cornstarch
Instructions

Make the sauce by whisking together the soy sauce, oyster sauce, sesame oil, sugar, and cornstarch/starch. Set aside.

In a small bowl, combine the kombu salt (place a 3 inch square piece of kombu and 1/3 cup salt into a food processor and chop to combine. Sift, discard bigger pieces and store the kombu salt and use as needed) and chicken. Toss to coat.

Heat a wok or large skillet over medium-high heat. Add a drizzle of sesame oil and the chicken. Cook, stirring occasionally, until the chicken is cooked through, about 5 minutes.

Add the shrimp and cook, stirring occasionally, until the shrimp are pink and cooked through, about 2 minutes.

Add the scallions, carrots, bean sprouts, garlic, ginger, and chili. Cook, stirring occasionally, until the vegetables are softened, about 3 minutes.

Add the sauce and cook, stirring constantly, until the sauce has thickened, about 1 minute.

Add the chow mein noodles and toss to coat.
