Ingredients
1/3 cup vegetable oil
2 medium onions, diced
3 celery stocks, diced
1/2 cup cup flour
6 cups chicken stock
2 cans evaporated milk
4 cups chopped broccoli
3 carrots, grated
3 cups grated cheddar cheese
Salt and pepper to taste

Heat a large pot on the stove and add the vegetable oil. Sauté the diced onions and celery for a few minutes until they become fragrant.

Sprinkle the flour into the pot and stir to combine. Mix in the chicken stock and bring the mixture to a simmer.

Use an immersion blender to puree the soup until smooth. Add the evaporated milk and stir to combine. Bring to a simmer and add the chopped broccoli, grated carrots, and cheese. Stir to combine.

Let the soup simmer for about 5 minutes until the broccoli is cooked and the soup thickens. Add salt and pepper to taste.
