Pork Schnitzel

Ingredients

6-8 thinly sliced pork steaks
1 1/2 cups flour
3 eggs
3 cups bread crumbs
1 small head of purple cabbage, shredded
1 small carrot, grated
3 tbsp vinegar
3 tbsp olive oil
3 russet potatoes, peeled and diced
1 lemon, cut into wedges (garnish)
Season salt and pepper
Oil for frying

Instructions

Whisk the eggs in a large bowl and set aside.

Sprinkle the pork steaks with season salt and pepper.

Dredge each pork steak in flour, shaking off any excess.

Dip each floured pork steak in the beaten eggs, allowing any excess egg to drip off.

Press each pork steak into the bread crumbs, making sure to coat both sides evenly.

Heat enough oil for frying in a large skillet over medium-high heat.

Once the oil is hot, carefully add the pork steaks to the pan. Fry for 2-3 minutes on each side, or until golden brown and cooked through.

Remove the pork steaks from the pan and place them on a paper towel to drain any excess oil.

To make the coleslaw, add the shredded purple cabbage and grated carrot to a large bowl.

Drizzle the cabbage and carrot with the vinegar and olive oil.

Season the coleslaw with salt and pepper, then toss to coat.

In a separate pot, boil the diced potatoes in salted water until they are al-dente, then drain.

Heat a large frying pan on medium-high heat and add enough oil to lightly coat the bottom of the pan.

Add the drained potatoes to the hot pan and season with salt and pepper.

Pan fry the potatoes, stirring occasionally, until they are golden brown and crispy.

Serve the pork schnitzel hot, garnished with lemon wedges and accompanied by the pan-fried potatoes and coleslaw. Enjoy!
