Pork Pupusas

Ingredients

For the coleslaw: 1 small green cabbage
1 small onion, thinly sliced
1-2 carrots, grated
1/2 cup white vinegar
1 tbsp dried oregano
1 tbsp salt or to taste
For the pupusa dough: 4 cups masa harina
3 cups water
1 tbsp salt
For the filling: 4 cups pork roast, chopped up into 1/2 inch cubes
1 roma tomato
1/2 yellow onion
2 cups refried beans
2 cups shredded cheese
Cooking oil
Salt and pepper to taste

Instructions

To make the coleslaw, finely shred the cabbage, grate the carrots, and thinly slice onion. Add them to a large bowl.

Pour white vinegar over the mixture, sprinkle with dried oregano and salt. Mix everything together to coat. Set aside.

To make the dough, add the masa harina to a bowl with the water and salt. Using your hand, mix until it pulls together into a soft dough. Cover with a damp towel and set aside.

To make the filling, heat a large saute pan on the stove and add enough oil to lightly coat the bottom of the pan.

Pan sear the pork until fully cooked. Add the cooked pork, tomato, and yellow onion to the bowl of your food processor. Pulse until everything is chopped together. It should be a thick paste.

To make the pupusa, remove some dough about the size of a “large golf ball”. Flatten it and add a spoonful of refried beans, shredded cheese, and the meat mixture. Bring everything together to seal up the ball.

Carefully flatten the ball as best you can and fry the pupusas in the same pan as you fried the pork in. If needed, add more oil to the pan. Fry until both sides are golden brown.

Serve with some of the coleslaw on the side. Put some coleslaw on the freshly fried pupusa, fold it over like a taco, eat and enjoy.
