Shredded Beef and Black Bean Salad

Made with tender beef, protein-packed black beans, this salad is the ideal way to fuel your body with nutrients. Ingredients

1 head chopped iceberg lettuce
4 cups cooked black beans, drained and rinsed
4 cups shredded beef
6-8 cups cilantro lime rice
1 cup sour cream
1/2 cup butter milk
1/3 cup pickled jalapeños
zest and juice of one lime
1 bunch cilantro
1 pkg prepared ranch dressing mix (about 1/4 cup)
4 large flour tortillas
Corn tortilla chips

Instructions

Prepare all ingredients before assembling to make it easier.

Drain and rinsed the black beans and add them to one side of a large fry pan. Add the shredded beef to the other side of the pan. Add about 1/3 cup water, cover and steam the shredded beef and cooked black beans to reheat.

In the bowl of your food processor, add the sour cream, buttermilk, pickled jalapeños, lime zest and juice, cilantro and the Ranch dressing and pulse to combine everything together until smooth.

To assemble, add the large flour tortilla to a plate followed by a large spoonful of the beans, cilantro lime rice, shredded beef, lettuce, corn tortilla chips, avocado slices (optional), salsa (optional) and the freshly made dressing and enjoy.
