Shredded Chicken Sliders

Shredded Chicken Sliders

These amazing sliders are perfect for a party. These can easily feed a crowd and can be adjusted to fit any crowd size.

Ingredients

4 chicken breasts
1/4 cups BBQ sauce
3 cups shredded green cabbage
3 cups shredded purple cabbage
1 cup shredded carrot
1/2 cup shredded bell pepper
1/2 purple onion, finely sliced
4 green onions, chopped
1 cup mayonnaise
2 tbsp Italian dressing
1 tbsp stone ground mustard (whole grain mustard)
1 tbsp garlic salt
1-2 tsp cayenne pepper (or to taste)
Pepper Jack cheese sliced
Freshly baked Rhodes Texas Rolls
Salt and pepper to taste

Instructions

Place the chicken breasts in a pan and cover with cold water. Bring the water to a simmer and poach for 25 minutes or until the breasts are fully cooked (165 F degree’s internally).

Cool the chicken breasts and shred into a large bowl. Mix with your favorite BBQ seasoning and set aside.

In another large bowl, combine the shredded cabbages, carrot, bell pepper, sliced purple onion tossing everything together to combine.

In a small bowl, mix together the mayonnaise, Italian dressing, mustard, garlic salt and cayenne pepper together until combine.

Pour the mayonnaise mixture over the coleslaw and mix together to coat everything.

To assemble the shredded chicken sliders, add some shredded chicken on a roll along with a slice of pepper jack cheese. Place under the broiler to melt the cheese.

Top the slider with the freshly made coleslaw, serve and enjoy!
