Salt and Pepper Chicken Wings
These wonderful wings are so good and perfect for a party get together with friends and family. Deliciously simple and just right for dinner or a quick snack.
Ingredients
2 pounds chicken wings, tips removed
3 mini sweet peppers, diced
2 tbsp minced garlic
2-3 green onions, chopped
1/2 cup flour
1/2 cup corn starch
Oil for deep frying
Chicken Marinade:
1/2 cup soy sauce
1/4 cup oyster sauce
2 tsp white pepper
1 tbsp cooking rice wine
2 tsp sugar
Chicken Seasoning:
1 tbsp garlic salt
1 tsp salt
1 tsp white pepper

Remove the discard the tips from the chicken wings and cut the thighs from the wing portion setting them aside. On the flat side of the “wing” cut 3 slits to help marinade penetrate and wings cook evenly. On the “drumstick portion” poke two holes on both side of the thick portion of the “drumstick”.

In a large bowl mix the soy sauce, oyster sauce, white pepper, cooking rice wine and sugar until combine. Place the prepared chicken pieces into the marinade and toss to coat. Let them marinate in the soy mixture for about 30 minutes.

In a large bowl whisk the flour and cornstarch together to combine and dredge the marinaded chicken wings in the dry mixture and using your hand, “squish” the dry coating into and on the chicken wings.

Fry in 325 degree oil for about 5 minutes, remove and set aside until ready for second frying.

Just before servings fry them a second crisp them up.

To finish the salt and pepper wings heat a large pan/wok on the stove and add the diced sweet peppers, garlic an green onions sautéing until fragrant. Add the double fried chicken wings, toss to combine everything and sprinkle with the chicken seasoning tossing to coat everything together, serve with your favorite sides.

To finish the buffalo style wings, combine 1 cup Franks hot sauce and 4 tbsp butter together until combined. Pour over some of the double fried wings to create buffalo wings. Serve with your favorite sides.
