Creamy Garlic Parmesan Pasta and Chicken
Dinner doesn’t get any easier than this. Not only is this pasta and chicken dish delicious it can be made any day of the week for a quick and hot dinner for kitchen table.
Ingredients
2 chicken breasts, cut into 4 strips each
2 tbsp cornstarch
2 tbsp season salt (I used a rotisserie chicken seasoning)
1 box rotini pasta (1 pound box)
1 medium onion, diced
2 cups sliced mushrooms
1 bell pepper, diced
1-2 tsp hot sauce or to taste
1 head of garlic, roasted and garlic removed
2 tbsp flour
4 cups half and half
2 cups shredded parmesan cheese
2 cups shredded Italian blend cheese
4 cups fresh spinach
Salt and pepper to taste
Cooking oil
Oil for deep frying
Instructions

Place the chicken slices into a large bowl and sprinkle them with the cornstarch and seasoning. Gently mix to coat the chicken.

Cook the pasta according to the package directions, drain and set aside.

Deep fry the chicken pieces for about 8 minutes or until cooked through remove from the oil and set aside.

Heat a large pan on the stove and add enough oil to coat the bottom of the pan.

Add the chopped onion, bell pepper, mushrooms, hot sauce and the roasted garlic mixing everything together. Sauté for a few minutes or until very fragrant.

Sprinkle the onion mixture with flour and stir to combine.

Pour in the half and half while stirring and bring to a simmer. Stir in the cheese and add the spinach letting it wilt down into the sauce while gently stirring.

Add the drain pasta to the sauce and stir to combine.

Slice the cooked chicken into pieces and stir into the pasta dish. Adjust seasoning to taste, serve and enjoy.
