Chicken Curry
Delicious chicken curry is such a flavor packed dinner idea. It’s easy to make using the spices you probably have in your spice cabinet already.
Ingredients
4 boneless chicken thighs
1 medium onion, thinly sliced
4 garlic gloves finely minced
1 tbsp finely grated ginger
3 tsp cumin
2 tsp coriander
1/2 tsp ground cloves
2 tsp tumeric
1/2 tsp ground cardamon
1 cup chicken stock
2 cans coconut milk (roughly 13/14 oz cans)
Salt and pepper to taste
6-8 cups cooked rice
Coconut oil
Instructions

Place the chicken in a bowl with the sliced onion, garlic, grated ginger and about 1/3 cup coconut oil. Mix together to coat everything, cover and let sit for 30 minutes.

Heat a high sided frying pan on the stove and add the marinated chicken browning on each side. Remove the chicken and transfer to a plate.

Add all of the marinade from the chicken into the pan along with spices and coconut milk. Stir to combine.

Add the chicken back into the sauce and simmer for 25 minutes to fully cook the chicken.

Serve over cooked rice, garnish with chopped cilantro and chopped cashews if desired.
