Summertime Berry Fool
This delicious summertime dessert is really easy and elegant to serve. I like to layer the dessert like a parfait so the fruit drips into the whipped cream.
Ingredients
1 cup raspberries
1 cup blackberries
1 cup strawberries, chopped
1/2-1 cup sugar
zest and juice of one lemon
2 cups whipped cream
1/3 cup sugar
2 tsp vanilla
1 cup sour cream
6-12 shortbread cookies
Instructions

Place the berries in a large bowl with the sugar (adjust the sugar according to the sweetness of the berries) along with the zest and lemon juice. Toss to coat and let the berries sit for about 30 minutes to macerate.

Place the whipped cream, sugar, vanilla and sour cream in a large bowl and whip to soft peaks.

To assemble the berry fools, crumble some cookies in the bottom of your presentation glass. Spoon some of the fruit over the cookies followed by the whipped cream and continue layering and finish with a crumbling of cookies. Serve and enjoy.
