Refreshing Black Bean Salad
This delicious salad goes well with any of your BBQ favorites. I love making this salad for dinner on a hot summers evening.
Ingredients
1 cans black beans, rinsed (15 ounce can)
1 pkg frozen corn (12 ounces)
2 bell peppers, diced
1 tbsp minced garlic
1 shallot minced
1/4 tsp cayenne pepper
2 tbsp sugar
1/3 cup olive oil
1 tbsp lime zest
3 limes, juiced
1 bunch fresh cilantro, chopped
1 avocados, diced
Salt and pepper to taste
Flour tortillas
Vegetable Oil

To make the flour tortilla bowls, Spray both sides liberally of a flour tortilla and fit it in a small stainless bowl and place it in a 400 degree oven for about 10 minutes or until it begins to turn brown and hold its shape. Remove from the oven and let the tortilla bowl cool, repeat.

In a large bowl add the black beans, frozen corn, diced bell peppers, minced garlic, minced shallots, cayenne pepper, sugar, olive oil, lime zest, lime juice and cilantro. Gently mix everything together to combine. Salt and pepper to taste, cover and refrigerate for a couple of hours.

Just before serving add the diced avocado, folding it in being careful not to mash the avocado.

Serve in the tortilla bowl with any other sides you choose. Enjoy!
