Bacon and Mushroom Alfredo Pasta
This delicious pasta dish has bacon, mushrooms and cream … what more could you want?!
Ingredients
1 pkg rigatoni pasta (1lb pkg)
8 slices bacon
1 small onion, diced
1 tbsp garlic
1 pkg button mushrooms sliced
2 cups chicken stock
1 1/2 cups heavy cream
1 1/2 cups grated parmesan cheese
Freshly chopped parsley, garnish
Salt and pepper to taste

Cook and drain pasta, setting aside when done.

In a large sauté pan cook the bacon until crispy, remove and set aside. Once the bacon has cooled, chop into bitesize pieces.

Sauté the diced onion, garlic and sliced mushrooms in the bacon grease until caramelized.

Pour the chicken stock into the pan and deglaze, reduce by half. Once reduced, add the heavy cream chopped bacon and parmesan cheese. Simmer for about 5 minutes or until the cream has thickened. Add the cooked pasta to the sauce and and stir to coat.

Serve pasta on a large platter and sprinkle with freshly chopped parsley.
