Pan Fried Beef Enchiladas
Easy to make and so delicious, these pan fried beef enchiladas are great! I used hamburger with this recipe, however, you could use any kind of protein to customize them.

Ingredients
1 pound hamburger
1 pkg taco seasoning
1 can enchilada sauce (28 oz can)
1 pkg corn tortillas (18-20 tortillas)
2-3 cups shredded cheese
1 cup fresh pico de gallo
2 cups shredded lettuce
1/2 cup sour cream
Salt and pepper to taste
Vegetable oil
Instructions

Cook and season the ground hamburger with the taco seasoning. I follow the directions from the taco seasoning package.

Pour the can of prepared enchilada sauce into large baking dish so you can easily dip the corn tortillas in them.

Heat a large saute pan on the stove and add just enough vegetable oil to lightly coat the bottom of the pan.

Dip a corn tortilla (both sides) in prepared enchilada sauce and place it in the preheat saute pan and cover with cheese and the cooked hamburger.

Carefully fold the corn tortilla like a taco and pan fry one side, carefully turning the enchilada over and fry the other side. Repeat the process.

Serve two or three pan fried enchiladas on a plate topped with fresh pico de gallo, shredded lettuce, a spoonful of sour cream.
