Taco Cheeseburger Baked Potato Bombs

Taco Cheeseburger Baked Potato Bombs

These delicious potato bombs are so fun to make and eat. These work out great on a smoker but can easily be made in the oven.

Ingredients

6 russet potatoes, baked and cooled
1 small onion, diced
1 pound ground beef
1 pkg taco seasoning
2 cups shredded cheese, plus more for garnish
12-15 slices of bacon
BBQ sauce, optional

Instructions

Bake the potatoes until baked and allow them to cool completely.

Cut about 1/2 inch off of the top of the potato and scoop out the inside being careful not to break the baked potato.

Cook the the hamburger with the onion and follow the directions on your taco seasoning package to season the hamburger.

Stir in the shredded cheese to the cooked hamburger. Spoon the hamburger mixture into the hollowed out potatoes and carefully wrap them in bacon.

Bake the potato bombs in a 350 degree oven until the bacon is cooked (about 15 minutes). If you choose, brush the potato bombs with bbq sauce, top with shredded cheese, serve and enjoy.
