BLT Pocket Sandwiches

BLT Pocket Sandwiches

Here’s a delicious twist on an all-time classic favorite, a BLT. Fresh pita pockets stuffed with all of the makings of our favorite BLT sandwiches. The one thing setting this apart from all others is the green salsa mayonnaise that takes it to the next level!

Ingredients

For the Pita Bread: 3 cups water
1 tbsp instant yeast
1 tbsp sugar
2 tp salt
7-8 cups flour
For the BLT Pocket Sandwiches: 3-4 large tomatoes, sliced
1 pkg bacon, cooked
1/2 head ice berg lettuce
1/2 cup mayonnaise
1/3 cup prepared green salsa

Instructions

To the bowl of your mixer, add the pita bread ingredients mixing for about 20 minutes.

Allow the dough to double in size, than shape into 12 equal pieces and shape them into round balls.

Place the shaped dough onto a baking sheet (lightly sprayed with vegetable oil) and allow them to rest for 30 minutes.

Preheat your oven to 450 degrees with your baking stone in the oven.

Roll each pita into an oblong shape about 1/4 inch thick. Place the pita dough on your preheated baking stone and allow them to bake and puff up. Once you start to see browning around the edges, remove from the oven and set aside to cool.

Cut each cooled pita bread in half and careful separate them to open the “pocket”.

In a small bowl mix the mayonnaise and prepared green salsa together.

Spread the green salsa mayonnaise into the pocket pita and stuff with bacon, tomato slices and iceberg lettuce. Salt and pepper to taste.
