Banana Cream Pie Bars

Banana Cream Pie Bars

Banana Cream Pie is hands down my favorite and turning them in bars is extraordinary. Easy to make and perfect with delicious Oakdell eggs!

Ingredients

For the Pastry Cream: 5 Oakdell Egg yolks
1/2 cup sugar
1/4 cup cornstarch
1 tsp salt
2 cups milk
2 tsp vanilla
3 cups whipping cream
1 pkg cream cheese, softened
For the Crust: 1/2 pkg vanilla wafer cookies
4 tbsp melted butter
3 bananas sliced

Instructions

To make the pastry cream, in a large bowl, add the Oakdell egg yolks, sugar, cornstarch and salt whisking everything together to combine.

In large sauce pan, add the milk and vanilla bringing it to a boil.

While whisking the egg mixture, pour half of the boiling milk into eggs to temper them. Pour everything into the sauce pan stirring to combine. Bring to a boil while whisking the pastry cream vigorously.

Pour the hot pastry cream into a fine mesh strainer and using a large spoon, press it through the strainer to remove any egg lumps. Cover the pastry cream and refrigerate until cooled.

Whip the whipping cream and fold the cream cheese into the whipped cream. I like to fold in about 1/4 cup sugar into the whipped cream to sweeten.

Fold half of the whipped cream mixture into the pastry cream and set aside for a moment.

In the bowl of your food processor, chop the vanilla wafers into crumbs and add the 4 tbsp of melted butter to create a crust. Press the vanilla wafer crumbs into an 8x8 pan and press it down to create a bottom crust.

Place the sliced bananas on the crust and spoon the pastry cream mixture over the bananas. Spoon the remaining whipped cream over top, chill and cut into bars. Serve and wing.
