Cucumber Radish Salad with Grilled Chicken
Light and refreshing, this cucumber radish salad and grilled chicken is perfectly easy for dinner.
Ingredients
4 boneless chicken thighs
12 radishes
1 cucumber, peeled
1/2 red onion, thinly sliced
1/4 cup rice vinegar
1 tbsp olive oil
2 tsp sesame seed oil
1/4 tsp red pepper flakes
Sesame seeds for garnish
Season salt and pepper to taste

Season the chicken as desired. Grill the chicken until fully cooked (165 degree’s internally).

While chicken is cooked, using a mandolin or your food processor and thinly slice the radishes, cucumbers and the red onion. Combine in a bowl and toss together.

In a small bowl, whisk the rice vinegar, olive oil, sesame seed oil and red pepper flakes together to combine. Salt and pepper to taste and pour over the sliced radish mixture and toss to coat, garnish with sesame seeds. Chill for 15 minutes.

Serve the cucumber radish salad with grilled chicken for a delicious dinner.
